Dipping out of the cycle of outrage, stupidity, and misery for a second:

CB's Nuts Dark Roast peanut butter is the best fuckin peanut butter I've ever had. It's almost savory, it's this fuckin close

to tasting like fried-chicken skin. Perfect grind, and the only ingredient is peanuts. No salt, no sugar, no fuckin palm oil to give it that clumpy crisco texture.

If you look up 10 recipes for a fermented product you will get 10 different approaches.

For Beetroot Kvass, the recipe in #TheArtofFermentation by #SandorKatz varies quite a lot from that in #FermentedVegetables by #KirstenShockey. I've tended to use Katz' recipe but with the amount of salt that Shockey's recipe has. Katz uses like a *pinch* of salt. I never understood that.

But this approach (below) says you actually don't need salt at all. There you go, now I understand Katz' approach.

(The recipe in the article uses sugar tho, which imo* is not needed plus he peels the beets and grates them. I prefer Katz' recipe - but this helped me understand why he uses minimal salt. Katz (I think, maybe it is Shockey) also says elsewhere not to grate beets as they will ferment like crazy.)

I picked the remaining grapes and don't really know what I am going to do with them all. If I'd had my wits about me I'd have picked them a few days ago and dried them in the sun. (We have some cooler weather beginning tomorrow. I think there are far too many to fit in the dehydrator. Others gifted, no doubt.)

This basket looks small but holds a LOT.
